Summer is here! We think there is no better way to stay hydrated and refreshed than with our Lavender Honey Sparkling Lemonade.
We recommend fresh squeezed juice and fresh lavender when it comes to making what will soon become a Summertime staple in your home. You can adjust the level of sweetness with how much of the lavender simple syrup you use.
A tip from our culinary director Chef Sean Cousins is to add a pinch of salt to this beverage to balance the sweetness and acidity.
To upgrade this into an adults only cocktail try adding an ounce of your favourite Gin and sip responsibly!
Lavender Honey Sparkling Lemonade
10 Sprigs of fresh lavender or 1 Tablespoon of dried lavender flowers
½ cup fine granulated sugar
½ Cup of Hot Water
1 cup fresh squeezed lemon juice (approximately 6 large lemons)
¼ cup Honey
1 large pinch of salt
4 cups Cold Sparkling Water
Sprigs of lavender*
-Remove the lavender blossoms and place in a small bowl heat proof bowl
-cover with granulated sugar and gently rub blossoms into sugar to release the essential oils
-pour hot water over sugar and stir until dissolved. Let steep for 15-20 minutes
-strain and cool the lavender simple syrup
-Dissolve the honey and salt into the lemon juice
When it is time to serve:
-Add lemon juice mixture to cold sparkling water and stir to combine
-add lavender simple syrup to taste
-serve over ice with thinly slices lemons and a fresh sprig of lavender
-Optional: add an ounce of your favourite gin and enjoy!
